The art of making grappa in Trentino is a true art that was born of family traditions handed down over the centuries, from generation to generation. Various historical testimonies make it possible to trace the origins of pomace distillation: documents found throughout the ages attest to the existence of "master distillers" as early as the first half of the nineteenth century, and the same documents provide evidence of the presence of Trentino distillates at the Hapsburg court. A journey of more than two centuries that has seen the birth of the 30 distilleries present in Trentino today: artisans who guard the secrets of distillation and who bring 8% of their entire annual production to the market, thanks to the selection of very little fresh pomace as a guarantee of quality. Unique in its fragrance and softness, elegant and refined: Trentino grappa is a product rich in facets and is a true mirror of the territory in which it is produced. To highlight its exclusivity and quality, the Istituto Tutela Grappa del Trentino was founded in the 1960s. The idea of the five founders (Bertagnolli, Pisoni, Sebastiani, Segnana and Bassetti) was to create a protection body that would enhance the production, obtained exclusively from Trentino pomace, and that would qualify these products with the Trident mark, affixed and recognisable on every single bottle. Self-discipline rules and strict controls have made the Institute what it is today: an unquestionable guarantee of quality, also certified by the collaboration with external bodies such as the Mach Foundation - Agricultural Institute of San Michele all'Adige, which constantly carries out chemical laboratory analyses, and the dedicated Commission of the Trento Chamber of Commerce, which deals with organoleptic examinations.
