What does "aqua vitae" mean?
Aquavit" is defined as an alcoholic product derived from the distillation of a fermented sugary liquid.

From this alcoholic base, then, the grappa is obtained by distillation: the elements are separated thanks to their different boiling degrees. Compared to other spirits, grappa differs in that it is made from a solid preparation, the grape marc.

What is pomace?
It is a mixture of grape skins, after they have been pressed to make wine. Few other fruits can compete with the aromatic complexity of the grape, due to the substances contained in its skin.

A historically Italian product
By EU law, the term 'grappa' is a protected geographical indication: no other country outside Italy can use this name.

Legend has it that an unknown Roman legionnaire, in the 1st century B.C., stole a distillation plant in Egypt and used the marc from his vineyard in Friuli.
The historian Luigi Papo dates the first production in Friuli back to 511 A.D., by the Burgundians who made a fleeting appearance in Cividale from nearby Austria, applying their apple distillation techniques to the marc.

Barrique: we are in a barrel of... Quality!
The precious distillate enriches its organoleptic properties if it is aged in wood, traditionally in 225 litre barrels, known as "barriques". For the ageing of grappa, oak, acacia and cherry prevail. Each of these types of wood gives the drink its own particular characteristics, which is why since 1999 some distilleries have also been using barrels made of different woods.
